To continue offering the distinctive, regional cuisines of southern Mexico by using traditional ingredients with an understanding of the nature of these ingredients, and by using traditional culinary methods that contribute to creating the uniquely complex flavors and textures that define a regional dish.
Born and raised in Oaxaca and previously the owner of restaurants in Veracruz and Easthampton, Massachusetts, Alberto López Palacios, the owner of Fiesta Oaxaca, has been sharing his love for the dishes he grew up with here in Santa Fe for the past 5 years. He continues to use both family recipes and the experience and knowledge he has accrued while running the 2 previous restaurants along with his own creations and dozens of vegan options.
Fiesta Oaxaca has been receiving awards for which the owner is both proud of and grateful to the community of Santa Fe.
